As previously mentioned, I’m a college student. While the perks of being a student are numerous, free t-shirts, being young, pretty girls, days that start after 1pm, not to mention that whole education thing, many of us are lacking in funds.
While cheap foods are aplenty (Ramen and Totino’s Pizza come to mind), these aren’t the best things to put in your body.
So if you're in the mood to eat healthy, have a limited budget (or just enjoy saving money), I've discovered a go-to dinner that I like to share with everyone that will listen.
The meal is healthy (approx 550 total calories, 70g carbs, 5g fiber, 38g protein) fast (about 15 minutes) and cheap (under $3)!
What you need
- 1 Boneless, Skinless Chicken Breast
- ¾ Cup Brown Minute Rice
- 2 Cups Frozen Stir-Fry Vegetables
- Random seasonings or marinade, and non-stick cooking spray
- 1 George Foreman Grill and small frying pan
Steps
- Add rice and ¾ cup of water into microwave safe bowl and microwave for 5 ½ minutes
- Season chicken breast, spray grill with non-stick spray, place breast on grill and cook
- Spray small frying pan with non-stick spray, put in vegetables, stir vigorously
- Take rice out of microwave, fluff with fork
- Turn off burner, let vegetables settle
- Take chicken breast off grill (7-8 minute cook time), cut into thickest part to ensure it is cooked through and safe to eat
- Place rice, vegetables, and chicken on plate, enjoy and watch Jeopardy!
